Oh, what a week. If ever there was a week that screamed for comfort food, this was it. Not only was it a bit stressful around these parts, we had our first few days of fall weather. We broke out the crock pot early in the week and made chili, then continued making our favorite comfort foods for the rest of the week. This chicken and rice recipe is super easy, quick and affordable. I bought a value pack of chicken breasts at the store and used half for this recipe, then baked the others last night. This dish has become the official Halloween dinner in our house. If you want something fast and comforting, this meal is for you.
CREAMY CHICKEN AND RICE
4 boneless, skinless chicken breasts, cut into cubes and sprinkled with spices of your choice (Recommended: Garlic powder and black pepper)
1 cup white rice, prepared per packaged instructions
1 Family-sized can or 2 small cans cream of mushroom soup*
1 soup can of water
*My husband isn't a big fan of mushrooms, so we use one small can cream of chicken and one can cream of mushroom.
While rice is cooking, cook chicken in a skillet until brown and cooked through. Add chicken to rice, then add soup and water. (You can increase or decrease the amount of water based on how soupy you like your dish.) Stir and heat through. Serve in your favorite bowl.

I like that with either chicken or pork! Both work well.

Adding cheese or a cup of frozen broccoli to this dish works well too for a little variety!

AJU5's Mom: YUM! My mom used to bake pork chops on top of rice w/cream of mushroom soup. LOVE it!
